flapjacks-pancakes by Luken and Mario




Ingredients
  • 150 g (1 cup) plain flour
  • 180 ml (¾ cup) milk
  • 25 g (2 tbsp) melted butter
  • 1 tbsp sugar
  • 1 egg
  • 1½ tsp baking powder
  • ¼ tsp salt
Instructions
  1. Mix the flour, sugar, salt and baking powder together in a bowl.
  2. Whisk the egg, butter and milk together in a large bowl. When well mixed, slowly add the in dried ingredients with continual whisking to achieve a smooth batter.
  3. Heat a flat pan over a medium heat. Pour about ¼ cup of the batter onto the pan and allow it to spread by itself.
  4. After about 30-40 seconds bubbles should appear and the bottom of the pancakes should be brown – check with a spatula!
  5. Flip the pancake over and cook for about another 30 seconds or until the other side is brown. Remove from the pan.
  6. Pour on your favourite syrup, top with a knob of butter if you wish, then serve while still warm.
